Eggs are a cheap source of protein and are great for breakfast, lunch, and dinner. While breakfast-for-dinner in our house typically consists of multiple items based on each person’s preference, omelette sandwiches are my personal fav. Here’s how to make them:
- 9 eggs
- 1/2 cup sour cream
- salt and pepper
- 1 cup cheddar cheese
- veggies – your choice
- crumbled, cooked sausage (optional)
You’ll also need:
- plain ole hamburger buns
- American cheese slices (optional)
Dice red onion, green pepper, mushrooms, or whatever veggies you have. Crack and whisk eggs with sour cream. The sour cream will be a little lumpy – do your best. Add cheese and veggies and combine.
Spray a 7 x 11 pan with cooking spray (preferred) or grease it with butter. Bake at 350* for 35-45 minutes.
To serve: slice an omelette square and serve on a hamburger bun with a slice of American cheese. You could also add bacon or a sausage patty – xoxo
