The recipe below is for 6, but you can double it easily.
Pre-heat oven to 375* and prep muffin pan with cooking spray. You could grease with butter but it doesn’t work as well as the spray. Conversely, you could buy a silicon muffin pan. Place a small amount of your add-ins in the bottom of each muffin cup.
Blitz the eggs and cottage cheese in a blender or food processor until smooth. Pour into muffin cups, dividing equally. Bake for 17-19 minutes. The tops should no longer be ‘wet’ and the edges will just barely be golden brown. Don’t overcook.

Dice red onion, green pepper, mushrooms, or whatever veggies you have. Crack and whisk eggs with sour cream. The sour cream will be a little lumpy – do your best. Add cheese and veggies and combine.
Spray a 7 x 11 pan with cooking spray (preferred) or grease it with butter. Bake at 350* for 35-45 minutes.
To serve: slice an omelette square and serve on a hamburger bun with a slice of American cheese. You could also add bacon or a sausage patty – xoxo
