Pumpkin-White Chocolate Chip Blondies

I have had this recipe for years and have tweaked it over time. It’s my favorite way to welcome fall. They make the house smell soooo good when they are baking, and they taste even better.

  • 2 cup all-purpose flour
  • 1 TB pumpkin pie spice
  • 1 tsp. baking soda
  • 3/4 tsp. salt

Mix the above and set aside.

  • 2 sticks butter, softened
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1 tsp. maple extract (if you have some)

Cream the above ingredients until well- incorporated. Slowly add flour mixture about 1/3 at a time and mix well. Then, add:

  • 1 cup plain, canned pumpkin

Mix well. And then add:

  • 1 cup white chocolate chips
  • 1 cup of pecans (optional)

Bake 350* for 35-40 minutes in a 13 x 9 pan that has been greased and floured. The mixture will be really thick and gooey. Just spread it around as best you can. Enjoy!
